Session 2 Good Eats

A cooking class was added to the daily routine of the LEARN participants as part of their health classes this summer. The following are recipes that were shared with the session 2 kids. Please let us know if you try any of them. 

Dandelion's Banana Bread

Yields: 1 loaf

Banana bread is a great snack for dessert and can actually be really healthy.  We made sure that it was really healthy by cutting the amount of butter, and therefore fat, that was being used by substituting it with apple sauce.  Apple sauce is really good to use in baking because it also leaves your baked goods nice and moist.

1 cup flour
1/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
2 large eggs
3 medium ripe bananas (the browner the better)
2/3 cup sugar
1/8 cup softened butter
1/2 cup apple sauce

Preheat the oven to 350 degrees F. Grease and lightly flour a loaf pan. In a small bowl mix together the flour, baking soda, baking powder, salt and cinnamon. In another bowl, beat the butter until light and fluffy. Add sugar and beat until combined. Stir in the eggs, apple sauce and bananas. Stir in the dry ingredients. DON'T OVERMIX. Pour mixture into the loaf pan. Bake for about 1 hour or until the toothpick comes out clean.

Pipkin's Old Fashioned Oatmeal Raisin Cookies
Yields: 30-34 cookies

Although this is a cookie, it is a really healthy cookie.  Oatmeal is really healthy food because it contains lots of fiber. This recipe also uses brown sugar instead of white which is much healthier and much less processed.

2 cups of old fashioned oats
1 1/4 cup flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ground ginger
3/4 cup butter
1 cup packed dark brown sugar
2 tsp vanilla extract
1 cup raisins

Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper. In a large mixing bowl whisk together the oatmeal, flour, baking soda, salt, cinnamon and ginger. In an electric mixer beat your butter and brown sugar until fluffy, scraping the sides of the bowl when needed. Add in your eggs one at a time until fully incorporated and then add the vanilla extract. On low speed, slowly add in the dry ingredients, scraping down the sides. When combined increase to mediums speed until all the ingredients are combined. Add in the raisins and combine for 30 seconds. Using a spoon, roll about a 1in ball of dough and slightly flatten with the palm of your hand, place on the cookie sheet about 2in apart from one another. Bake for 13-14 minutes, remove from oven and let sit on the cookie sheet for 4 minutes and then transfer to wire rack to cool completely.

Speedwell’s Stuffing
As part of our Thanksgiving dinner the girls of Speedwell made themselves some delicious homemade stuffing.  We did not follow an exact recipe but I will fill you in on what we did.

Preheat oven to 350 degrees F. Rip or cut up bread into bite size pieces. Stale bread works fantastic for this. Place these directly into a baking pan. Cut up carrots, celery and onions into small chunks. Probably 1 onion and 2 carrot and celery sticks should be enough. Combine the vegetables and bread and season with pepper and oregano. Add your favorite broth.  This is where it gets tricky without a measurement.  You want enough broth so that the stuffing is saturated, but you don’t want so much broth that your stuffing becomes soggy.  I would suggest that it is best if you start with a smaller amount and as it bakes if it looks like it is drying out, add more. Put in the oven for 30 minutes but check periodically if you are unsure about the broth.

Hrairoo & Boxwood’s Cabbage Slaw and Corn Salsa
Both of these items are super healthy.  Cabbage has lots of vitamin A which is great for eye sight.  They also have a great mexican flare so don’t be afraid to kick up the spices.

Cabbage Slaw
1 red cabbage, shredded or finely chopped
3 carrots, shredded or finely chopped
3 apples, chopped into thin strips
Lime juice
Olive Oil
Garlic powder
salt and pepper

Chop up all ingredients and put in a bowl. Add an equal amount of lime juice and olive oil and taste as you go, you don't want it to be too powerful without over powering.  Season with garlic powder, salt and pepper to taste. The longer that you allow it to sit, the more the flavors will soak in.

Corn Salsa
1lb of frozen or fresh corn
3 tomatoes
1 bunch of cilantro

Thaw corn in water and set aside. Cut up tomato and cilantro. Strain corn and combine all ingredients.  Sprinkle with lemon juice and season to taste.

Hazelnut’s Franks in a Blanket
We do that to admit that this recipe is quite down low on the health scale but it allowed us to bring up information on processed and fast foods and how they should be eaten in moderation, if at all. This is another recipe that doesn’t have a recipe but it is very self explanatory.  The Girls had a really fun time getting to make and knead their own biscuit dough.  This is something that a lot of them had not done before.  We used a simple bisquick recipe but if you are feeling more adventurous you can make the dough from scratch.  Then roll out the dough until it is at the desired thickness, keeping in mind that the dough may rise a little when making.  Cut the dough into either triangles or rectangles that are two inches long, getting as many strips as you can.  Then wrap the dough around beef hot dogs and bake until the dough is crispy and golden brown.

Strawberry’s Pancakes
The Strawberry Boys got a chance to make pancakes from scratch.  Although there was no whole wheat flour used to make them either healthier, we truly believe that something that you just don’t have to add water is much better for you.  To add a healthy twist to these pancakes we loaded the batter with blueberries.

1 ¼ cup all-purpose flour
2 tbs sugar
2 tsp baking powder
1 egg beaten
1 cup milk
2 tbs cooking oil

Stir together flour, sugar, baking powder, and ½ tsp salt. Combine egg, milk and oil; add all at once to the flour mixture stirring till blended but still slightly lumpy. Pour about ¼ cup batter onto a hot lightly greased griddle or frying pan. Cook Cook until golden brown on the pan side and bubbly surface and slightly dry ages. Makes about 8 4-inch pancakes. 

Bluebell’s Apple Sauce

Apple sauce is very very easy to make. It can contain as little as one ingredient or can have a bunch of additional toppings.  Apples also have a lot of really good health benefits so they are a great thing to keep in your diet.  Apple sauce is made by peeling and cutting apples and sweating them out in a pot.  Cut more apples than you would think because they will shrink down in size.  Water needs to be added to the pot or the apples will burn, although that is also delicious because it caramelizes.  To spice it up add cinnamon and brown sugar or maple syrup.To make this an amazing snack on a hot day, freeze into popsicles and drizzle with caramel (optional). 

Silver’s Bean Salad
Silver got the chance to make a very healthy salad.  They had a lot of fun pouring and rinsing the 10 lb cans of beans.

1 can chickpeas
1 can kidney beans
3 cups of green beans

Strain and rinse the chickpeas and black beans. Add lightly steam or fresh green beans. Dress with oil, apple cider vinegar, parsley, dill, garlic, salt and pepper to taste.
